WINEMAKING The wine was tank pressed with freerun and pressings juice fractions fermented separately. Cool even primary fermentation over 15 days retained fruit flavour and freshness. 16 months on lees. Blended for secondary fermentation which occurred in the bottle as per traditional method. The wine was disgorged and bottled in July 2007. |

TASTING This sparkling wine has good strawberry pinot structure balanced with a creamy palate. Fine yeast autolysis characters produced during aging have turned this sparkling into a very elegant wine.
