The fruit for this wine was entirely estate grown at Johnston’s Oakbank
vineyard nestled on elevated slopes about 400 metres above sea level.
It was carefully monitored by Winemaker, David O’Leary and harvested
under ideal conditions to ensure that optimum fruit flavour was captured
at harvest.
PROCESSING
The fruit for this wine was crushed and destemmed, must chilled and then
gently tank pressed into stainless steel tanks. Cool fermentation on partial
solids proceeded over 12 days using cultured yeast, designed to maintain
fruit freshness and flavour. Being an unwooded style, this careful handling
of the fruit is paramount to retain flavour and a clean, crisp palate.
Post ermentation, the wine was cleaned up to maximise the powerful
varietal fruit flavours so typical of this style.
TASTING
This wine shows tremendous varietal fruits, white peach, fresh tropicals and hints
of melon. The palate is creamy and flavoursome and has great fruit weight and
length, finishing clean and crisp with balanced acidity. A great wine to drink at
any time, this wine will age gracefully over the next 3-5 years. |
